Want a fun breakfast recipe that is not only easy but a crowd pleaser?? Well look no further, these banana pancakes are sure to rock your socks off. Even the not pancake lovers in the room enjoyed these. What's great about them is they're so tasty you don't need to smother them in maple syrup..
however, if you want to.... go for it!
What you need:
1 cup of flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
1 cup milk
1 tsp vanilla extract
2 tbsp vanilla yogurt (you could use vegetable oil)
2 ripe bananas, mashed
(yields 8 thick pancakes)
Combine dry ingredients in one bowl
Mix egg, milk, yogurt, and extract into mashed bananas
Stir dry ingredients into banana mixture until smooth
Pour round(ish) circles of batter onto a greased pan on Med-high heat
Once the batter looks like it's cooked through enough, flip pancake and finish cooking
Top with a little more yogurt and bananas like me or with whatever else sounds good and enjoy :)
These will be used for a fun weekend breakfast or special occasions in our house from now on!
