Breakfast Casserole

Looking for delicious but simple Mother's Day brunch idea? Well look no further because I have the perfect recipe for you, a breakfast casserole.

I've made variations of this breakfast casserole three times in the last few months and they always go over really well!

What you need:
1 dozen eggs
1 8 ounce cup of milk
1 bag of breakfast potatoes (you could do hash-browns of diced potatoes)
2 cups of cheddar cheese
1 package of breakfast meat of choice, fully cooked (ham, sausage, chorizo or everyone's favorite: bacon)
salt and pepper to taste

Method:
Preheat over to 350 degrees. In a casserole dish add potatoes and cooked meat in an even layer.  In a separate bowl scramble dozen eggs with cup of milk and add salt and pepper to taste. Stir in 1 cup of cheese. Pour egg mixture over potato and meat mixture then cover with remaining cheese. Put in oven for 1 hour or when cheese starts to bubble.

This is one of those awesome recipes you could even make the night before and chill until it's time to cook.
