So I have the simplest, yet super delish and elegant cupcake recipe for your Fall get-together's these next few weeks! Mini Pumpkin Spice Cupcakes with Cream Cheese frosting!
What You Need:
-spice cake mix
-15 ounce can of pumpkin puree
-1 bar cream cheese, softened
-1/2 cup powdered sugar (more or less depending on how sweet you'd like it)
-tsp vanilla extract
-preheat oven to 350 degrees
-combine spice cake mix and pumpkin puree until smooth
-place into mini cupcake holders, bake for 8-10 minutes
While the cake is baking start the frosting by combining cream cheese, powdered sugar and vanilla extract until smooth. Add more sugar if frosting seems to be too thin. Put frosting into ziploc bed into the refrigerator until the cupcakes are cool.
Cut off the corner of the bag and pipe frosting onto the mini cupcakes, dust with cinnamon.
